Know your Bread

Post by BobbyOrr »

With very limited options in St Louis other than chain grocery stores, the bread you eat is probably SH.
I miss foreign Artisan Rustic bread shops!

https://www.bbc.com/future/article/2025 ... -be-eating

Always check the Ingredients list for High Carbs, lots of Sugar and a long list of (bleep) ingredients to avoid.

Some healthy ones, not artesian , but still check the ingredients as some options in these brands are not the healthiest .

Walmart & Others,--- Dave's Killer Bread® Powerseed® Organic
Trader Joes & Others --- Ezekiel sprouted Whole grain
Aldies --- Simply Nature, Seedtastic Organic

Add any you have found or good Artisan bread at Bread shops if there are any ?

I'll take bread from Marconi Bakery, Vitale's or Fazio's over any of the ones listed above. In fact, I'll take them over any bread sold in a grocery or big retail store.

probably right for Taste,
BECAUSE

The ingredients list Should be
1. Water
2. Salt
3. Wheat Flour
4. Nothing Else - None of the (bleep) in store bread....

The list above breads are the Healthiest Store Breads, Your only St Louis option Unless you want to drive a good distance OR make it yourself.

Less and Less Healthy store Options Everyday, because - WE Allow it!

That makes a nice matzo, but I prefer some sourdough or yeast in my bread.

A few years ago I bought this terrific book entitled "Flour Water Salt Yeast" by a baker in Portland OR., Ken Forkish. Fascinating book, beautifully illustrated. Very informative. Highly recommended. He also was a web page with several informative videos. On the site, click the menu logo (upper right), click "books" the " videos". Or use the second link to go right to the videos.
Bon Appetit!

Oops. The videos on his web site are quite limited, but if you Google Ken Forkish Videos, you'll find them. Here's the first, basic bread. After measuring the water, he adds Levain, which is basically sourdough starter.

There's plenty of "good" bread in St Louis.

I buy Izzio multi grain sourdough at FreshTyme that's totally healthy. They also sell Bake House fresh bread. That's just on provider in town, plenty of others.

Bobby doesn't actually want to know if there are any good bread options. It gets off crying about St. Louis food while longing for a greasy street taco from a bacteria-infested truck in some gang-banger neighborhood in East LA.

Whole Foods's "seeduction" bread is excellent.
